There was a required course at my college if you were going to do the foreign study program in France. The professor let us know that the French like their steak bleu, which is a bit less cooked than rare. He told us that he once sent a steak back as he wanted it medium. The chef stormed out of the kitchen and slammed his plate down on the table announcing “we do not serve shoe leather!”

Btw I believe that anything beyond medium rare is a waste of a good piece of meat. And from my experience working in restaurants during my college years, anyone ordering a steak well done gets the worst piece of meat available.
